A tasty soup which can be enjoyed as an appetiser or for lunch.

Ingredients

250 g shin beef minced
3 egg whites
1 brown onion
50 g celery diced
50 g carrot diced
3 peppercorns
1 bay leaf
¼ bunch thyme sprig
¼ bunch parsley stalks
1500 mL cold beef stock (white or brown)

Mushroom tortellini

50 g button mushroom
50 g shitake mushroom
30 g butter
8 wonton wrappers
Salt/pepper to taste
1 garlic clove – crushed
20 g chives – chopped finely
